Irish cookies, pumpkin rolls and blueberry muffins are just a few of the tasty dishes students at the University of Mary Washington created from food that would have otherwise been wasted! Through Professor Kashef Majid’s course Alleviating Food Waste, students at UMW are able to get a firsthand look at the causes of food waste, as well as create and enjoy upcycled dishes.
