A Taste of India from our Lead Engineer

We love sharing insights and recipes from the Replate team! Anchit is our lead engineer, and has been at the company for over three years. Below is an original recipe inspired by his mother and their home country of India. 

The dish is similar to Tikka Masala, Makhani, and Jalfrezi, and can be crafted using a variety of spices and items from the local Indian store.. Not only is it delicious, it’s also a great way to use up some of the ingredients lying around your kitchen or pantry.

Toast up some bread that’s going stale and enjoy!

Ingredients list:

  • Asian stir fry mix (Trader Joe's recommended)

  • Paneer (Indian store)

  • 2-3 bell peppers (try to use up some that have been lying around!)

  • 2 cups tomato sauce 

  • 1 1/2 tbsp. cumin seeds

  • 2 tbsp. onion salt 

  • 1/2 tsp. turmeric powder

  • 1 tbsp. coriander seeds 

  • Ghee

  • 3 cloves of garlic (minced) 

  • 1/2  tbsp. cumin powder

  • 1 tbsp. ketchup

  • Butter 

  • Salt

Anchit’s Recipe:

  1. Heat a pan on medium and spread some ghee onto it for 2 minutes

  2. After 2 minutes, drop a handful of cumin seeds into the pan

  3. Let the seeds cook, once they start sizzling, add the Asian stir fry vegetable mix, peppers and paneer

  4. Once you think the mix is a about a quarter of the way cooked, add the remaining spices 

  5. Stir and allow the stir fry vegetable mix cook to almost done

  6. Add the tomato sauce to cover all the vegetables so the vegetables are in a sauce 

  7. Add ketchup

  8. Turn the heat down, cover the pan and let the mix cook for a bit

  9. Turn off the heat, immediately add some butter, let the butter melt into the dish

  10.  Serve with naan or rice.
